Our 5 Tuscan olive varieties, Coratina, Pendolino, Leccino, Frantoio and Maurino are farmed organically since I planted in 2007. The olives are combined and milled at an organically certified facility, The oil settles to clarify over 2-4 weeks and then is bottled. Our customers have come to love our pungent oil that has the characteristic spiciness that results from having the perfect blend of ripeness...60% green, 20% purple and 20% black. The oil sells out quickly so don't delay since the spicy and delicious character mellows throughout the year.
